Hi blog buddies! :) Right now I'm using my iPod to post because we're on the way to the farm for the weekend. Dad wants us to build a firepit and we have some fencing to tear down so we can till the ground where the garden will eventually be.
Today I decided to post the recipe for what we had for dinner last night. It was a new recipe and it was AWESOME. So, here it is! :)I'm not sure what cookbook it's from, because the cover is ripped off. I know it's from Taste of Home though.
Creamy White Chili
Ingredients:
1 lb. boneless skinless chicken breasts, pour into 1/2 inch cubes.
1 medium onion, chopped
1-1/2 tsp. garlic powder
1 T. vegetable oil (we used olive oil)
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
2 cans (4 ounces each) chopped green chilis
1 tsp. salt
1 tsp. ground cumin
1 tsp. ground oregano
1/2 tsp. pepper
1/4 tsp. cayenne pepper
1 cup (8 ounces) sour cream
1/2 cup heavy whipping cream
Directions:
1) In a large saucepan, sauté chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chilis and seasonings. Bring to a boil.
2) Reduce heat; simmer, uncovered, for 30 minutes. Remove from heat; stir in sour cream and cream. Serve immediately.
Yield: 7 servings.
Because it only made 7 servings and Dad hadn't had lunch, we got less than we would normally get and ate it with tortilla chips. That was pretty good. :)
